Friday Night Lights Chili
This is not traditional "cook-off" chili. And it will stir controversy among those "no beans" Texas chili mavens. But, aside from the fact that it′s delicious, it is easy to put together and calls for ingredients most people have on hand or are easily obtainable.
• 2 pounds ground chuck • 3 large cloves garlic • 2 large onions, chopped • 2 16-ounce cans kidney beans, undrained • 2 cups water • 1 16-ounce cans whole, peeled tomatoes, undrained and chopped • 1 8-ounce can tomato sauce • 2 rounded tablespoons chili powder • 2 teaspoons garlic salt • 1 teaspoon dried whole oregano • 1 teaspoon black pepper • 1-1/2 teaspoons ground cumin • 1/2 teaspoon crushed red pepper flakes • Hot sauce, to taste • Chopped green onions, optional • Shredded Cheddar cheese, optional • Corn chips, optional Combine the ground chuck, garllic and onion in a Dutch oven and cook until beef if browned, stirring to crumble it. Drain well. Add beans and next 10 ingredients. Reduce heat and summer, uncovered, for 1 hour, stirring occasionally. Serve topped with chopped green onions, cheese and corn chips, if desired.
Makes 8 generous servings.
